Equilibrium Brine Cure Calculator
This calculator can be used for all immersion cured meat products, including bacon, in all countries except the US. In the US it can be used for all immersion cured meat products except bacon for which different rules apply.

What total weight of brine cure do you want? gm
Are you curing to US or EU regulations
EU will calculate nitrite at 150 mg/kg ingoing; US will calculate it at 200 mg/kg.

Neither
If you have selected 'Neither' how many mg/kg nitrite do you want in the meat?
mg/kg is also referred to as PPM (parts Per Million). Amounts above 250 mg/kg will not be calculated.

Are you using saltpetre (saltpeter)?
You may use saltpetre (saltpeter) as well as Cure #1 or other cure containing nitrite. It must not be used with cure #2 or other cure containing nitrate.
Yes
No
What is the percentage of Nitrite in the Curing Salt?
Typical values: US = 6.25%, UK = various, UK cure #1 is often 6% or 6.25%, Europe = 0.6%.

Full Equilibrium Brine Cure Amended EQ Brine Cure
This amended EQ Brine is designed to give the salt and sugar levels you want in the quicker curing time of 10 days per kg using a brine that is 50% of the meat's weight. It also allows the use of a stronger brine for safer curing.
The estimated minimum time to reach equilibrium is:
It is probably well in excess of this time.

Salt
This takes into account the salt in any cure. A negative figure means that the cure has more salt in it than the amount wanted in the meat.
